Spice in the spotlight: Versatile Cinnamon 

For more than 125 years, Euroma has been travelling the world in search of the very best herbs and spices. And cinnamon has always been part of the journey. It is one of the oldest spices; it goes back 2,500 years. Many of us like this spice and thats not without reason. It complements both savoury and sweet dishes. But few of us know how cinnamon grows. It is actually the dried bark of the cinnamon tree. Another interesting fact is that there are many types of cinnamon.

These are two types available at Euroma:


Ceylon - Cinnamomum Zeylanicum

The Ceylon cinnamon thanks its name to its origin. It mainly grows on Sri Lanka. The taste is more subtle, warm and round then the cassia. It has strong floral and pine mint notes. The appearance of the sticks is lighter of colour.

 

Cassia - Cinnamomum burmannii

Cassia mainly grows in Indonesia. Its taste profile is more sharp, and more bitter. But it is also perceived as more sweet. The appearance of the product is dark brown or deep red. Cassia cinnamon is cheaper and therefore more commonly used for industrial purposes.


Ceylon contains much less coumarin than cassia. Coumarin is an aromatic compound, smelling like hay. Coumarin is not healthy in large quantities. Ceylon cinnamon comes from a shrub, and cassia from a tree, where the difference in flavour originates. Both cassia and Ceylon cinnamon pair well with both sweet and savory dishes. The sharp flavour of cassia or the richer and sweeter taste of Ceylon cinnamon are characteristics that can enhance your dish. Ceylon cinnamon has a soft, mild flavour and a delightful aroma. It combines well with sweet dishes but is also delicious in Indian and Chinese cuisine.
